Ichigo Cakes is an Ashland based cake and pastry business formed in 2011 by Chef Nathan Kelsey.

Local appreciation and demand for truly scratch desserts has been the driving force in its growing success. “Ichigo”, is the Japanese word for strawberry and Ichigo Cake is widely popular throughout the world. The character of the cake is the same as the business. The emphases is on subtlety, not being overly sweet, the use of the best ingredients, simple yet elegant.
