The world of cacao is rich with mystique and its hold on us mirrors a deep and timeless love affair. Yet, what lies behind this complex pleasure? In this engaging, interactive, hands-on session, you'll learn how chocolate is made from bean to bar, what factors contribute to chocolate's flavor, how and why it affects us emotionally and physically, its role in history and culture, and how good social and environmental practices can be integrated from farms to retail. We'll stimulate all of your senses, and indulge your curiosity and palate, through a multi-media presentation, a tasting of cacao beans, nibs and chocolate of different cacao contents, origins and processing methods, and Q&A.
Presented by Melissa Schweisguth:
Melissa has had her hands in the chocolate industry for nearly 10 years, cultivating a deep passion for cacao and sharing its wonders. Her experience includes Marketing and Full Circle Sustainability Manager at Dagoba Organic Chocolate, Corporate Social Responsibility Manager at the Hershey Company and Fair Trade Coordinator at Global Exchange. She has presented to diverse audiences and developed K-12 and community education materials. Melissa has also traveled to cacao farms in Nicaragua and Ecuador and coordinated US speaking tours with cocoa farmers, keeping this magical food and its benefits for people and planet close to her heart.
