Ever wondered how all those pretty artisan chocolates are made? Join master chocolatier, Jeff Shepherd of Lillie Belle Farms as he blows the lid off of the industry by showing you how its done. From tempering to airbrushing to center construction he will guide the room though the intricate and often time consuming process of making beautiful hand made chocolates.
Jeff Shepherd has been heralded as a "New Breed of Chocolatier" by CBS News for his innovative chocolate creations, many of which have won national and internationl awards. His infectious passion for all things chocolate is palpable in his larger thn life personality and scathing humor. Come and watch him and his trusty assistant, Dan the Man, attempt to do in an hour somthing that often takes days. Will they succeed? Will they make a horrible mess? Or both? In this guided tasting we will taste 7 of the top rated chocolates, counting up from the Bolivian Cru Sauvage to the number one Amedei Chuao. We will taste and reflect on some of the wonderful flavor notes that only our dark master can provide, cherries and plums, spicy raisins and molasses, ripe tropical fruit and licorice sticks. Bring a quiet mind and curious taste buds.
Join Charlie Douglass, a third generation Candymaker, who apprenticed with Master Candymaker Christian Steiner and has studied with renown Chocolatier-Chef Jean-Pierre Wybauw and Chef John Krauss. Currently he is the Chocolatier for Harry and David where he has worked for the last 28 years. He is also the member of the Outreach Committee for the Ashland Food Co-op.

Paula Richards' Chocolating Techniques:
Paula Richards from Vintage Truffles located in Newport, OR will be demonstrating her chocolatiering techniques she acquired in Vienna. Paula is the winner of the Newport Chocolate Show 2009. Her truffles were voted ‘the most stylish’ in the Northwest.
