2008 Chocolate Festival Seminars
Chocolate Art seminar:
The presentation by Jeff Shepherd from Lillie Belle Farms will include chocolate molding techniques as well as a hands on truffle class. Additionally, Jeff will make, from scratch, a decadent drinking chocolate from fresh roasted cacao beans.
Your Skin Eats Too!:
Imagine all the benefits for your health and skin derived from the pleasures of chocolate. Experience how chocolate products feel on your skin. Hear about the trends in spas offering massages, facials and wraps using chocolate. Attendees can enter their name in a drawing for a free chocolate facial offered by Waterstone Spa.
Tao of Cacao:
Spend 45 minutes traveling the lands of Cacao with Frederick Schilling, founder of Dagoba Organic Chocolate. Explore the origins of the food of the gods, and the journey of the sacred cacao bean.
Triple Chocolate Cheesecake Raw - Cooking demonstration:
March 8, 2008, 12 noon
Local resident Josephine Lee, representing raw community will demonstrate how to prepare a truly outstanding RAW TRIPLE CHOCOLATE CHERRY CHEESECAKE (no flour, no eggs, no dairy, no baking). Just "SUPERFOOD" decadence!
Chocolate Showcase
Sunday at 10am
Tiffany Christy, a graduate of the Western Culinary Institute in pastry & baking and one of the pastry chefs at Larks-Home Kitchen Cuisine will be talking about chocolate as an artistic medium used in creating sculptures. During her presentation Tiffany will finish her 2 feet tall dark chocolate sculpture of a tree with vines, a bird nest, and other beautiful elements. Over 5 pounds of chocolate will be used for this showcase.

Join Charlie Douglass, a third generation Candymaker, who apprenticed with Master Candymaker Christian Steiner and has studied with renown Chocolatier-Chef Jean-Pierre Wybauw and Chef John Krauss. Currently he is the Chocolatier for Harry and David where he has worked for the last 28 years. He is also the member of the Outreach Committee for the Ashland Food Co-op.
During his informative seminar Mr. Douglass will talk about his craftsmanship, as well as focus on the nutritional aspects of chocolate, and its effects on our mood and physiology. Finally, he will touch on the history of the aphrodisiacal qualities of chocolate and some historical personas, who used chocolate for that purpose.
